Ingredients

  • 1 cup basmati rice
  • 1 lb lamb or chicken, cubed
  • 1/2 cup raisins
  • 1/2 cup almonds, sliced
  • 1 whole onion, sliced
  • 2 tsp cumin seeds
  • 4 whole cardamom pods
  • 1 whole cinnamon stick
  • 3 cups water
  • 3 tbsp oil

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the cumin seeds, cardamom pods, and cinnamon stick; sauté until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Add the cubed lamb or chicken, cooking until browned on all sides.
  5. Stir in the basmati rice, raisins, and almonds.
  6. Pour water over the mixture and bring it to a boil.
  7. Reduce the heat, cover, and simmer for 30 minutes until the rice is cooked and the liquid is absorbed.
  8. Fluff the rice with a fork once cooked.
  9. Garnish with additional nuts and raisins before serving.
