Instructions

  1. Place the chicken pieces in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked, about 30 minutes. Remove chicken from pot and let cool before shredding the meat.
  2. Add carrots, celery, onion, rice, chicken broth, thyme, and rosemary to the pot. Bring to a boil, then reduce heat and simmer until the rice is tender, about 20 minutes.
  3. Return the shredded chicken to the pot. Simmer for an additional 5 minutes to blend the flavors. Adjust the seasoning, adding salt if necessary, before serving.
