Rice Pudding Cups

Rice Pudding Cups offer a smooth, sweet dessert experience with a comforting touch. Made from cooked rice stirred into a blend of milk and sugar, this dessert is subtly enhanced with the warm flavors of cinnamon and nutmeg. Once the combination thickens, it’s divided into individual cups to set and cool. For a final touch, each cup may be garnished with a sprinkle of cinnamon or a dab of whipped cream. This dessert is not only satisfying but also a joy to prepare and serve.

Ingredients

  • 1/2 cup short-grain white rice, uncooked
  • 2 cups whole milk
  • 1/3 cup sugar
  • 1/2 tsp vanilla extract
  • salt, to taste
  • 1/2 tsp ground cinnamon

Instructions

  1. Place the rice and 1 1/2 cups of milk in a saucepan over medium heat until it reaches a simmer.
  2. Continue to cook on low heat, stirring often, until the rice is fully cooked and the mixture has a creamy consistency, about 20 minutes.
  3. Add sugar, vanilla extract, a pinch of salt, and the remaining milk to the rice mixture. Keep stirring over low heat for an additional 10 minutes.
  4. After removing the mixture from heat, allow it to cool for a few minutes before evenly distributing it into serving cups.
  5. Refrigerate the pudding cups until they are firm, approximately 2 hours.
  6. Top each cup with a light dusting of ground cinnamon just before serving.
