Ingredients

  • 12 oz macaroni pasta
  • 2 cups broccoli florets
  • 1 cup carrots, shredded
  • 2 cups cheddar cheese, shredded
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni in boiling water according to package instructions until al dente, then drain.
  3. In a saucepan, melt butter over medium heat. Stir in flour and cook for one minute, stirring continuously.
  4. Gradually add milk to the saucepan while continuously whisking. Add a pinch of salt and stir until the sauce thickens.
  5. Remove saucepan from heat and stir in 1 1/2 cups of shredded cheddar until melted.
  6. In a large bowl, mix the cooked macaroni, broccoli, and carrots. Pour the cheese sauce over the pasta and vegetables and stir until well combined.
  7. Transfer the mixture to a baking dish and sprinkle the remaining cheddar cheese on top.
  8. Bake for 20 minutes or until the top is golden brown and bubbly.
  9. Allow to cool slightly before serving.
