Konafa, also known as Knafeh, is a revered Middle Eastern dessert featuring shredded phyllo dough, sweet cheese, and fragrant sugar syrup. This rich treat is cherished for its crispy, golden exterior and soft, gooey cheese center. The interplay of contrasting textures and flavors makes Konafa a delightful dessert for special occasions or gatherings. It can be enjoyed fresh out of the oven or at room temperature, offering a unique taste and beautiful presentation.
Ingredients
- 1 package shredded phyllo dough
- 1 cup unsalted butter, melted
- 1 cup crushed pistachios
- 1 1/2 cups mozzarella cheese, shredded
- 1 1/2 cups ricotta cheese
- 1/2 cup sugar
- 1 tsp rose water
- 1 cup water
- 1 cup sugar
Instructions
- Preheat the oven to 350°F (180°C).
- In a large bowl, mix the shredded phyllo dough with melted butter until well combined.
- Press half of the phyllo mixture into the bottom of a greased baking dish to form a crust.
- In another bowl, combine mozzarella, ricotta, and 1/2 cup sugar. Spread this cheese mixture over the phyllo crust evenly.
- Top the cheese layer with the remaining phyllo mixture, pressing gently to adhere.
- Bake in the preheated oven for 30 minutes or until the top is golden brown and crisp.
- While the Konafa is baking, prepare the sugar syrup by boiling 1 cup of water with 1 cup of sugar until it slightly thickens. Stir in the rose water and remove from heat.
- As soon as the Konafa is out of the oven, pour the hot syrup evenly over it, allowing it to soak in.
- Garnish with crushed pistachios, spreading them evenly over the top.
