Kottu Roti is a popular Sri Lankan street food that combines chopped roti, eggs, vegetables, and spices for a flavorful stir-fry.
Ingredients
- 4 roti, chopped into small pieces
- 2 eggs, beaten
- 1 cup mixed vegetables, chopped
- 200 grams chicken breast, cooked and shredded
- 1 medium onion, sliced
- 2 tablespoons soy sauce
- 1 teaspoon curry powder
- 1 teaspoon turmeric
- 2 tablespoons vegetable oil
- salt and pepper to taste
Instructions
- Heat the vegetable oil in an 8-inch skillet over medium heat.
- Add sliced onion and sauté until golden brown.
- Add mixed vegetables and stir-fry for 3-4 minutes until slightly tender.
- Push vegetables to the side of the skillet and add beaten eggs. Scramble until fully cooked.
- Mix the eggs with the vegetables, then add cooked chicken and chopped roti.
- Stir in curry powder, turmeric, soy sauce, salt, and pepper.
- Continue cooking, stirring frequently, for another 5 minutes until everything is well combined and heated through.
- Serve hot, garnished with additional soy sauce if desired.
