Kottu Roti is a popular Sri Lankan street food that combines chopped roti, eggs, vegetables, and spices for a flavorful stir-fry.

Ingredients

  • 4 roti, chopped into small pieces
  • 2 eggs, beaten
  • 1 cup mixed vegetables, chopped
  • 200 grams chicken breast, cooked and shredded
  • 1 medium onion, sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric
  • 2 tablespoons vegetable oil
  • salt and pepper to taste

Instructions

  1. Heat the vegetable oil in an 8-inch skillet over medium heat.
  2. Add sliced onion and sauté until golden brown.
  3. Add mixed vegetables and stir-fry for 3-4 minutes until slightly tender.
  4. Push vegetables to the side of the skillet and add beaten eggs. Scramble until fully cooked.
  5. Mix the eggs with the vegetables, then add cooked chicken and chopped roti.
  6. Stir in curry powder, turmeric, soy sauce, salt, and pepper.
  7. Continue cooking, stirring frequently, for another 5 minutes until everything is well combined and heated through.
  8. Serve hot, garnished with additional soy sauce if desired.
