Ingredients

- 2 lemons, halved
- 4 sprigs fresh rosemary
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the whole chicken under cold water and pat dry with paper towels.
- Season the cavity of the chicken with salt and pepper.
- Squeeze the juice of one lemon over the chicken, then stuff the lemon halves and rosemary sprigs into the cavity.
- In a small bowl, combine olive oil, minced garlic, salt, and pepper. Brush the mixture over the entire surface of the chicken.
- Place the chicken breast-side up on a roasting pan or a baking dish.
- Squeeze the juice of the remaining lemon over the chicken and arrange the halves around the chicken.
- Roast in the preheated oven for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
