Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 lemons, halved
  • 4 sprigs fresh rosemary
  • 1/4 cup olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat dry with paper towels.
  3. Season the cavity of the chicken with salt and pepper.
  4. Squeeze the juice of one lemon over the chicken, then stuff the lemon halves and rosemary sprigs into the cavity.
  5. In a small bowl, combine olive oil, minced garlic, salt, and pepper. Brush the mixture over the entire surface of the chicken.
  6. Place the chicken breast-side up on a roasting pan or a baking dish.
  7. Squeeze the juice of the remaining lemon over the chicken and arrange the halves around the chicken.
  8. Roast in the preheated oven for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for 10 minutes before carving and serving.
