Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until al dente, then drain and lay flat on a clean surface to prevent sticking.
  3. In a mixing bowl, combine the cooked lentils with ricotta cheese, dried oregano, and garlic powder. Adjust seasoning with salt and freshly ground black pepper, mixing well to distribute flavors.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish to prevent sticking of the roll-ups.
  5. Spread a generous amount of the lentil and ricotta mixture evenly along each noodle. Carefully roll up the noodles and place them seam side down in the prepared baking dish.
  6. Top the roll-ups with the remaining marinara sauce, ensuring they are well covered. Sprinkle evenly with shredded mozzarella and grated parmesan cheeses.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is thoroughly melted and slightly golden.
  8. Allow to cool for a few minutes before serving to let the roll-ups set for easier serving.
