  • 8 slices bacon, cooked and crumbled
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine the maple syrup and bourbon. Set aside.
  3. In a separate bowl, mix together the flour, baking soda, and salt.
  4. In a large bowl, cream together the butter, brown sugar, and sugar until light and fluffy, about 3 minutes.
  5. Beat in the vanilla extract and eggs, adding the eggs one at a time, mixing well after each addition.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in the crumbled bacon pieces evenly into the dough.
  8. Drop spoonfuls of dough onto the prepared baking sheet, spacing them at least 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes or until the cookies are golden brown around the edges.
  10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
