Ingredients

  • 1 cup chopped fresh spinach
  • 4 large eggs
  • 1/2 cup crumbled feta cheese
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 mini phyllo pastry shells

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin pan.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Add the chopped spinach and crumbled feta cheese to the egg mixture and stir.
  4. Place one phyllo pastry shell into each muffin cup of the pan.
  5. Spoon the spinach and feta mixture evenly into the pastry shells, filling them about 3/4 full.
  6. Bake in the preheated oven for 20 minutes or until the egg mixture is set and the tops are slightly golden.
  7. Remove from the oven and let the quiches cool in the pan for 5 minutes before transferring to a wire rack or serving platter.
