Ingredients

  • 1 whole premade tart shell
  • 1 15 oz can chickpeas, drained and rinsed
  • 1 whole roasted red pepper, chopped
  • 2 Tbsp tahini
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 Tbsp lemon juice
  • 1/2 tsp cumin
  • salt
  • pepper
  • 1 Tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the premade tart shell on a baking sheet and bake for 10 minutes. Remove from the oven and let it cool completely.
  3. In a food processor, add the chickpeas, roasted red pepper, tahini, garlic, olive oil, lemon juice, cumin, and a pinch of salt and pepper.
  4. Blend the mixture until smooth and creamy, scraping down the sides of the processor as needed.
  5. Once the tart shell is cooled, spread the hummus mixture evenly inside.
  6. Sprinkle the top with chopped fresh parsley.
  7. Place the filled tart back in the oven and bake for an additional 10 minutes to warm through.
  8. Allow the tart to cool slightly before serving. It can be served warm or at room temperature.
