Ingredients

  • 1 cup arborio rice
  • 4 cups milk

  • 1/4 cup slivered almonds
  • 1/2 tsp vanilla extract

Instructions

  1. In a saucepan, combine the milk and saffron threads. Heat over medium heat until almost boiling, then remove from heat and let the saffron steep.
  2. In another saucepan, bring 2 cups of water to a boil. Add the arborio rice and cook for about 10 minutes, or until the rice is tender. Drain and set aside.
  3. Add the cooked rice to the saffron-infused milk. Simmer on low heat, stirring occasionally, until the mixture thickens and becomes creamy, about 20 minutes.
  4. Stir in the sugar, golden raisins, slivered almonds, and vanilla extract. Cook for another 5 minutes, ensuring the sugar is fully dissolved.
  5. Remove from heat and allow the pudding to cool slightly before serving. The pudding will continue to thicken as it cools.
