A refreshing blend of sesame ginger tofu, noodles, and scallions creates a vibrant salad perfect for lunch or dinner.
Ingredients
- 14 oz firm tofu, drained and cubed
- 8 oz rice noodles
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon fresh ginger, grated
- 2 tablespoons honey
- 2 cloves garlic, minced
- 4 scallions, sliced
- 1 tablespoon sesame seeds, toasted
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, sesame oil, ginger, honey, and garlic. Add cubed tofu and marinate for 15 minutes.
- Cook rice noodles according to package instructions, drain, and rinse under cold water.
- In a skillet over medium heat, lightly fry the marinated tofu until golden brown on all sides, about 5-7 minutes.
- In a large bowl, combine cooked noodles, tofu, sliced scallions, and toasted sesame seeds.
- Sprinkle with red pepper flakes, and season with salt and pepper to taste.
- Toss all ingredients well to coat with the marinade.
- Serve immediately or refrigerate and serve chilled.
