A refreshing blend of sesame ginger tofu, noodles, and scallions creates a vibrant salad perfect for lunch or dinner.

Ingredients

  • 14 oz firm tofu, drained and cubed
  • 8 oz rice noodles
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 4 scallions, sliced
  • 1 tablespoon sesame seeds, toasted
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix soy sauce, sesame oil, ginger, honey, and garlic. Add cubed tofu and marinate for 15 minutes.
  2. Cook rice noodles according to package instructions, drain, and rinse under cold water.
  3. In a skillet over medium heat, lightly fry the marinated tofu until golden brown on all sides, about 5-7 minutes.
  4. In a large bowl, combine cooked noodles, tofu, sliced scallions, and toasted sesame seeds.
  5. Sprinkle with red pepper flakes, and season with salt and pepper to taste.
  6. Toss all ingredients well to coat with the marinade.
  7. Serve immediately or refrigerate and serve chilled.
