Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup BBQ sauce
  • 2 ears of corn, cut into thirds
  • 2 red bell peppers, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a 9×13-inch baking sheet with parchment paper.
  2. Rub the chicken thighs with salt, pepper, garlic powder, and onion powder.
  3. Place the chicken thighs on one side of the prepared sheet pan, skin side up.
  4. In a bowl, toss the corn and bell pepper slices with olive oil and a pinch of salt and pepper.
  5. Arrange the corn and bell peppers on the other side of the sheet pan.
  6. Brush the chicken thighs generously with BBQ sauce.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. During the last 5 minutes of baking, brush additional BBQ sauce on the chicken for extra flavor.
  9. Remove from the oven and let rest for 5-10 minutes before serving.
  10. Serve the chicken along with the roasted corn and bell peppers. Optionally, garnish with fresh herbs.
