Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 cup BBQ sauce
- 2 ears of corn, cut into thirds
- 2 red bell peppers, sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C) and line a 9×13-inch baking sheet with parchment paper.
- Rub the chicken thighs with salt, pepper, garlic powder, and onion powder.
- Place the chicken thighs on one side of the prepared sheet pan, skin side up.
- In a bowl, toss the corn and bell pepper slices with olive oil and a pinch of salt and pepper.
- Arrange the corn and bell peppers on the other side of the sheet pan.
- Brush the chicken thighs generously with BBQ sauce.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- During the last 5 minutes of baking, brush additional BBQ sauce on the chicken for extra flavor.
- Remove from the oven and let rest for 5-10 minutes before serving.
- Serve the chicken along with the roasted corn and bell peppers. Optionally, garnish with fresh herbs.
