Ingredients

  • 3 whole bell peppers, halved and seeded
  • 2 Tbsp olive oil

  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the bell peppers, cut side down, on a baking sheet and evenly drizzle with olive oil.
  3. Roast in the oven for 20-25 minutes or until the peppers are tender and the skin is slightly blistered.
  4. Remove from the oven and allow to cool for a few minutes before stuffing each pepper half with crumbled feta cheese.
  5. Evenly sprinkle dried oregano, salt, and black pepper over the filled peppers. Serve immediately or keep warm until serving.
