Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 whole onion, chopped

  • 1 inch piece fresh ginger, grated
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 1 14 oz can coconut milk
  • 4 cups vegetable broth
  • 1 Tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic, grated ginger, cinnamon, and turmeric, and cook for another 2 minutes.
  4. Add the diced sweet potatoes, coconut milk, and vegetable broth. Bring to a boil, then reduce heat to a simmer for 20 minutes, or until the sweet potatoes are tender.
  5. Using an immersion blender, blend the soup until smooth. Taste and adjust seasoning with salt and pepper, if needed.
  6. Serve hot, garnish with a sprinkle of cinnamon and a swirl of coconut milk, if desired.
