Ingredients

  • 2 Tbsp olive oil
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped

  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 14 oz can crushed tomatoes
  • 1 Tbsp harissa paste
  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 1 Tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  4. Add the crushed tomatoes and harissa paste, and simmer for 10 minutes to allow flavors to meld.
  5. Make four wells in the sauce and crack an egg into each well.
  6. Cover the skillet and cook until the egg whites are set but yolks are still runny, about 5 minutes.
  7. Sprinkle the crumbled feta cheese and chopped parsley over the top before serving.
