Ingredients

  • 6 whole large onions
  • 1 cup rice, uncooked
  • 1/2 lb ground beef
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup parsley, chopped
  • 2 tbsp olive oil
  • 1 cup water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel the onions and cut off the tops. Scoop out the center of each onion, leaving about 2-3 layers intact.
  3. In a bowl, combine the rice, ground beef, cumin, paprika, parsley, and a pinch of salt and pepper. Mix well.
  4. Stuff the onions with the rice mixture and place them in a baking dish.
  5. Drizzle olive oil over the stuffed onions and pour water into the baking dish around them.
  6. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the onions are tender.
  7. Serve the stuffed onions, optionally garnished with additional parsley.
