Crisp toasted bread topped with fresh tomato, basil, and a tangy balsamic reduction for a delightful appetizer.

Ingredients

  • 1 loaf French baguette
  • 2 cups roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the French baguette into 1/2-inch thick slices.
  3. Arrange the bread slices on a baking sheet and brush them with 1 tablespoon of olive oil.
  4. Toast the bread in the oven for about 8-10 minutes until golden brown.
  5. While the bread is toasting, combine diced tomatoes, chopped basil, minced garlic, remaining olive oil, salt, and pepper in a bowl. Mix well.
  6. In a small saucepan over medium heat, bring balsamic vinegar to a boil, then reduce heat and simmer until reduced by half, about 5 minutes.
  7. Remove toasted bread from the oven and let it cool slightly.
  8. Top each slice with a spoonful of the tomato mixture.
  9. Drizzle the balsamic reduction over the topped bread slices.
  10. Serve immediately as a refreshing appetizer.
