Zalabya (زلابيا)

Zalabya, also known as zalabia or zalabiya, is a cherished Middle Eastern dessert made from a simple batter that is fried to a golden crisp and then soaked in a fragrant sugar syrup. Ingredients

  • 1 cup all-purpose flour
  • 1 tsp yeast
  • 1/2 cup water
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1/2 tsp cardamom
  • 1/2 cup sugar, for syrup
  • 1/2 cup water, for syrup
  • 1/2 tsp lemon juice, for syrup

Instructions

  1. In a bowl, mix all-purpose flour, yeast, water, and salt to form a smooth batter. Cover the bowl with a cloth and let it rise in a warm place for about 1 hour.
  2. In a saucepan over medium heat, combine sugar, water, and cardamom to make the syrup. Simmer for 10 minutes, stirring occasionally, then add lemon juice and continue to simmer for another 2 minutes. Set aside to cool slightly.
  3. In a deep pan or pot, heat a sufficient amount of oil to 350°F (175°C). Carefully pipe the batter into the hot oil using a piping bag, forming small circular shapes. Fry the pieces until they are golden brown on all sides, about 3-4 minutes per batch.
  4. Using a slotted spoon, remove the fried zalabya from the oil and drain on paper towels briefly.
  5. While still warm, soak the fried zalabya in the prepared syrup for a few seconds to a minute, ensuring they are well-coated. Remove from the syrup and place on a serving dish. Serve while warm.
