  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, cubed
  • 6 cups chicken broth
  • 1 cup long-grain white rice
  • 1 tsp dried thyme
  • 1/2 cup heavy cream

Instructions

  1. Heat a large pot over medium heat and add a splash of oil. Saute the onion and garlic until the onion is translucent, about 3 to 4 minutes.
  2. Add the cubed chicken to the pot and saute until it is just browned on all sides.
  3. Pour the chicken broth into the pot and bring the mixture to a boil over high heat.
