Ingredients
- 1 pound large shrimp, peeled and deveined
- 8 ounces udon noodles
- 1/2 cup sweet chili sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 large red bell pepper, sliced
- 1 cup broccoli florets
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon vegetable oil
Instructions
- Cook udon noodles according to package instructions. Drain and set aside.
- In a large skillet, heat vegetable oil over medium-high heat.
- Add garlic and ginger, stirring constantly for 30 seconds until fragrant.
- Add shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and set aside.
- In the same skillet, add red bell pepper and broccoli florets. Stir-fry for 4-5 minutes until tender-crisp.
- Return the shrimp to the skillet and add sweet chili sauce, soy sauce, and sesame oil. Stir well to coat.
- Add cooked udon noodles and green onions. Toss everything together and heat through for 2 minutes.
- Serve hot, garnished with additional green onions if desired.
