Crispy and flavorful, these air-fried egg rolls are filled with shrimp and a medley of vegetables for a delightful appetizer.
Ingredients
- 1 cup shrimp, peeled and deveined
- 2 cups coleslaw mix
- 1 carrot, julienned
- 2 tablespoons soy sauce
- 2 teaspoons ginger, grated
- 1 tablespoon sesame oil
- 12 egg roll wrappers
- 1 egg, beaten
- 1 tablespoon vegetable oil
Instructions
- In a large bowl, combine shrimp, coleslaw mix, carrot, soy sauce, and ginger. Mix well.
- Heat sesame oil in a skillet over medium heat. Add the shrimp and vegetable mixture and cook for 3-4 minutes until shrimp are pink and vegetables are just tender.
- Remove from heat and let the filling cool slightly.
- Lay an egg roll wrapper on a clean surface. Place a few tablespoons of filling near the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to enclose the filling. Brush the top corner with beaten egg to seal.
- Repeat with remaining wrappers and filling.
- Preheat the air fryer to 400°F (200°C). Lightly brush the egg rolls with vegetable oil.
- Place egg rolls in a single layer in the air fryer basket. Cook for 7-9 minutes, turning halfway through, until golden and crisp.
- Serve hot with your choice of dipping sauce.
