Crispy and flavorful, these air-fried egg rolls are filled with shrimp and a medley of vegetables for a delightful appetizer.

Ingredients

  • 1 cup shrimp, peeled and deveined
  • 2 cups coleslaw mix
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 2 teaspoons ginger, grated
  • 1 tablespoon sesame oil
  • 12 egg roll wrappers
  • 1 egg, beaten
  • 1 tablespoon vegetable oil

Instructions

  1. In a large bowl, combine shrimp, coleslaw mix, carrot, soy sauce, and ginger. Mix well.
  2. Heat sesame oil in a skillet over medium heat. Add the shrimp and vegetable mixture and cook for 3-4 minutes until shrimp are pink and vegetables are just tender.
  3. Remove from heat and let the filling cool slightly.
  4. Lay an egg roll wrapper on a clean surface. Place a few tablespoons of filling near the center of the wrapper.
  5. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to enclose the filling. Brush the top corner with beaten egg to seal.
  6. Repeat with remaining wrappers and filling.
  7. Preheat the air fryer to 400°F (200°C). Lightly brush the egg rolls with vegetable oil.
  8. Place egg rolls in a single layer in the air fryer basket. Cook for 7-9 minutes, turning halfway through, until golden and crisp.
  9. Serve hot with your choice of dipping sauce.
