Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup green onions, chopped
  • 1/4 cup breadcrumbs
  • 2 whole eggs, beaten
  • 1 cup flour
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup vegetable oil, for frying

Instructions

  1. Boil the diced potatoes in salted water until fork-tender. Drain and transfer to a large mixing bowl.
  2. Mash the potatoes until smooth. Stir in the shredded cheddar cheese, grated parmesan cheese, chopped green onions, garlic powder, salt, and black pepper until well combined.
  3. Form the potato mixture into small, even balls. Prepare three bowls for breading: one with flour, one with beaten eggs, and one with breadcrumbs.
  4. Roll each ball in flour, dip in beaten eggs, and then coat evenly with breadcrumbs.
  5. Heat vegetable oil in a skillet over medium heat (350°F (177°C)). Fry the croquettes until they are golden brown and crispy on all sides, about 3-4 minutes per side.
  6. Transfer the croquettes to a paper towel-lined plate to drain excess oil before serving.
