  • 2 ripe avocados, sliced

  • 1/4 cup fresh cilantro leaves
  • 1 cup mango, diced
  • 1 tablespoon lime juice
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 garlic clove, minced

Instructions

  1. Prepare the mango salsa by mixing diced mango and lime juice in a bowl. Set aside.
  2. In a separate bowl, combine peanut butter, soy sauce, honey, sesame oil, and minced garlic. Whisk until smooth. This is your peanut dipping sauce.
  3. Fill a large shallow dish with warm water. Submerge one rice paper wrapper at a time until it softens, about 10-15 seconds.
  4. Lay the softened wrapper on a damp cloth. In the center, place a few slices of avocado, some carrot, cucumber, red bell pepper, fresh mint, and cilantro.
  5. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to seal. Repeat with remaining wrappers and filling.
  6. Serve the avocado spring rolls with peanut dipping sauce and mango salsa on the side.
