Ingredients
- 8 rice paper wrappers
- 2 ripe avocados, sliced
- 1 cup carrot, julienned
- 1 cup cucumber, julienned
- 1/2 cup red bell pepper, sliced thinly
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1 cup mango, diced
- 1 tablespoon lime juice
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 garlic clove, minced
Instructions
- Prepare the mango salsa by mixing diced mango and lime juice in a bowl. Set aside.
- In a separate bowl, combine peanut butter, soy sauce, honey, sesame oil, and minced garlic. Whisk until smooth. This is your peanut dipping sauce.
- Fill a large shallow dish with warm water. Submerge one rice paper wrapper at a time until it softens, about 10-15 seconds.
- Lay the softened wrapper on a damp cloth. In the center, place a few slices of avocado, some carrot, cucumber, red bell pepper, fresh mint, and cilantro.
- Fold the sides of the wrapper over the filling, then roll tightly from the bottom to seal. Repeat with remaining wrappers and filling.
- Serve the avocado spring rolls with peanut dipping sauce and mango salsa on the side.
