Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can jackfruit, drained and shredded
- 1/2 cup BBQ sauce
- 4 bell peppers, halved and seeded
- 1 cup pineapple, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- 1/4 cup cilantro, chopped
- salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the shredded jackfruit and BBQ sauce. Stir well and cook for 10 minutes until heated through.
- Place the bell pepper halves on a baking sheet, cut side up. Fill each with the jackfruit mixture.
- Bake in the preheated oven for 30-35 minutes, until the peppers are tender.
- Meanwhile, in a bowl, combine the diced pineapple, red onion, jalapeño, lime juice, and cilantro to make the salsa.
- Season the salsa with salt and pepper to taste.
- Serve the stuffed peppers topped with the pineapple salsa.
