Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can jackfruit, drained and shredded
  • 1/2 cup BBQ sauce
  • 4 bell peppers, halved and seeded
  • 1 cup pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons lime juice
  • 1/4 cup cilantro, chopped
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent.
  3. Add the shredded jackfruit and BBQ sauce. Stir well and cook for 10 minutes until heated through.
  4. Place the bell pepper halves on a baking sheet, cut side up. Fill each with the jackfruit mixture.
  5. Bake in the preheated oven for 30-35 minutes, until the peppers are tender.
  6. Meanwhile, in a bowl, combine the diced pineapple, red onion, jalapeño, lime juice, and cilantro to make the salsa.
  7. Season the salsa with salt and pepper to taste.
  8. Serve the stuffed peppers topped with the pineapple salsa.
