Ingredients

  • 8 oz rice vermicelli noodles

  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1/4 cup peanuts, chopped
  • 12 sheets rice paper

Instructions

  1. Prepare the rice vermicelli noodles as instructed on the package. Drain well and set aside.
  2. Boil water in a large pot. Add shrimp and cook for 2 to 3 minutes until they turn pink and are thoroughly cooked. Drain and allow to cool.

  5. Fold the sides of the rice paper inward over the filling. Roll the wrapper tightly to ensure the filling is securely enclosed.
  6. Continue the process with the remaining rice papers and fillings.
  7. Mix the ingredients for the peanut sauce in a small bowl until smooth and well combined.
  8. Serve the spring rolls immediately with the peanut sauce on the side for dipping.
