  • 1 tsp Cumin
  • 1/2 tsp Paprika
  • 1/4 tsp Cayenne Pepper
  • 4 large tortillas
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a skillet over medium heat. Once hot, add the onion and garlic. Sauté until the onions become translucent, about 2-3 minutes.
  2. Add the bell pepper, cumin, paprika, and cayenne pepper to the skillet. Stir well and cook until the bell pepper is tender, approximately 5 minutes.
  3. Stir in the black beans and continue to cook for another 3 minutes, allowing flavors to meld.
  4. Warm the tortillas briefly in a dry skillet over medium heat or in the microwave for about 10 seconds each.
  5. Spoon the bean and vegetable mixture evenly onto the center of each tortilla. Add salsa and a sprinkle of chopped cilantro on top.
  6. Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly to close. Serve the burritos warm.
