Elevate your mashed potatoes with the rich flavor of brown butter and a topping of crispy shallots that add a delightful crunch.

Ingredients

  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 shallots, thinly sliced
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water.
  2. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 15 minutes.
  3. While the potatoes cook, melt the butter in a small saucepan over low heat until it turns golden brown, about 5 minutes. Set aside.
  4. Drain the cooked potatoes and return them to the pot.
  5. Add the brown butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy.
  6. In a skillet, heat the vegetable oil over medium heat.
  7. Dredge the sliced shallots in flour, shake off excess, and fry in batches until golden and crispy, about 2-3 minutes per batch.
  8. Drain the crispy shallots on a paper towel-lined plate.
  9. Serve the mashed potatoes topped with crispy shallots.
