Ingredients

  • 2 medium ripe bananas, mashed
  • 1/3 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the mashed bananas with melted butter in a large bowl.
  3. Stir in brown sugar and vanilla extract until well combined.
  4. Separately, whisk together the baking soda, salt, and flour.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until just combined to avoid overmixing.
  6. Fold in the chopped walnuts gently to distribute evenly.
  7. Spoon the batter into the lined muffin tin cups, filling each to about three-quarters full.
  8. Bake for 20-25 minutes, checking doneness by inserting a toothpick into the center of a muffin. If it comes out clean, they are ready.
  9. Allow the muffins to cool in the tin for 5 minutes, then move them to a wire rack to cool completely.
