Ingredients
- 1 pound squid, cleaned and sliced into rings
- 1/4 cup sugar

- 2 tablespoons water
- 2 stalks lemongrass, white part only, minced
- 1 small shallot, sliced
- 1 tablespoon sesame seeds, toasted, for garnish
Instructions
- To make the caramel sauce, heat sugar in a saucepan over medium heat until it melts and turns golden brown, about 5 minutes. Be careful not to burn it.
- Carefully add water to the caramel, stirring until smooth. Remove from heat and set aside.
- In a bowl, combine squid, garlic, fish sauce, lemongrass, shallot, and black pepper. Marinate for 1 hour.
- Heat vegetable oil in a large pan over medium-high heat. Add the marinated squid and cook until caramelized, about 5-7 minutes.
- Pour the prepared caramel sauce over the squid, stirring well to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- Serve the caramelized squid hot, garnished with toasted sesame seeds.
