Ingredients

  • 2 carrots, julienned
  • 1 cucumber, julienned
  • 2 cups cups sushi rice, cooked
  • 4 nori sheets
  • 1/4 cup cup mayonnaise
  • 1 tablespoon tablespoon sriracha sauce
  • 1 tablespoon tablespoon soy sauce
  • 1 teaspoon teaspoon rice vinegar

Instructions

  1. Prepare the sushi rice according to package instructions and let it cool slightly.
  2. In a small bowl, mix mayonnaise and sriracha sauce to make the spicy mayo. Set aside.
  3. Place a nori sheet on a bamboo sushi mat, shiny side down.
  4. Spread 1/2 cup of sushi rice evenly over the nori, leaving a 1-inch border at the top.
  5. Arrange carrot and cucumber julienne in a line across the center of the rice.
  6. Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll.
  7. Repeat with the remaining nori sheets and fillings.
  8. Slice each roll into six pieces using a sharp knife.
  9. Drizzle the spicy sriracha mayo over the sushi rolls.
  10. Serve with soy sauce and a small dash of rice vinegar for dipping.
