Ingredients

  • 1 whole chicken, skinless and boneless, cut into pieces
  • 1 cup wild rice
  • 1 whole onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 stalks celery, sliced
  • 6 cups chicken broth, low-sodium
  • 1 tsp thyme, dried
  • 1/2 tsp rosemary, dried
  • 1/2 tsp sage, dried
  • 1/2 cup cream, heavy
  • 2 tbsp butter

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Saute the onions, garlic, carrots, and celery until the onions are translucent and the vegetables begin to soften, about 5 to 7 minutes.
  3. Add the chicken, wild rice, and chicken broth to the pot. Stir in thyme, rosemary, and sage. Raise the heat to bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the pot, and let simmer for 30 minutes, allowing the flavors to meld.
  5. Carefully remove the chicken from the pot. Once cool enough to handle, shred the chicken into bite-sized pieces and return it to the pot.
  6. Pour in the heavy cream and mix thoroughly. Continue to simmer for another 10 minutes to let the soup thicken slightly.
  7. Adjust the seasoning, adding salt and pepper as needed before serving.
