Ingredients

  • 1 1/2 cups cooked chickpeas
  • 2 cups fresh spinach, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs

  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the chickpeas until mostly smooth.
  3. Add chopped spinach, onion, garlic, breadcrumbs, cumin, coriander, salt, and black pepper to the chickpeas. Mix until well combined.
  4. Shape the mixture into small balls or patties, about 1 inch in diameter, and place them on the prepared baking sheet.
  5. Brush the poppers with olive oil to enhance crispiness.
  6. Bake for 15 minutes, flip the poppers, and bake for an additional 15 minutes until golden brown.
  7. In a small bowl, whisk together tahini, lemon juice, water, and maple syrup to make the sauce.
  8. Serve the poppers warm, garnished with fresh parsley, alongside the lemon tahini sauce for dipping.
