Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 2 tbsp olive oil
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 tbsp dijon mustard
- 1 tbsp fresh tarragon, chopped
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup frozen peas
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add chicken thighs and cook until browned on all sides, then remove and set aside.
- In the same pot, sauté chopped onions and minced garlic until onions are translucent, about 3 minutes.
