Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 tbsp olive oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp dijon mustard
  • 1 tbsp fresh tarragon, chopped
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup frozen peas

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add chicken thighs and cook until browned on all sides, then remove and set aside.
  3. In the same pot, sauté chopped onions and minced garlic until onions are translucent, about 3 minutes.
  4. Stir in 1 tablespoon of Dijon mustard and 1 tablespoon of chopped fresh tarragon, then add 4 cups of chicken broth.
  5. Return the chicken thighs to the pot. Add sliced carrots and diced potatoes.
  6. Bring to a simmer, cover, and cook for 30 minutes or until the chicken is cooked through and vegetables are tender.
  7. Add frozen peas and cook for an additional 5 minutes.
  8. Taste and season with salt and pepper as needed.
