Tender steamed artichokes pair beautifully with a tangy lemon aioli and aromatic fresh tarragon.
Ingredients
- 4 artichokes
- 1 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 cloves garlic, minced
- 1 tablespoon fresh tarragon, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Trim the artichokes by snipping off the thorny leaf tips and cutting off the top inch of the artichokes.
- Fill a large pot with about 2 inches of water and place a steaming basket inside.
- Bring the water to a boil, then place the artichokes in the steaming basket.
- Cover the pot and steam the artichokes over medium heat for 25-30 minutes, or until the leaves easily pull away.
- While the artichokes are steaming, prepare the lemon aioli by combining mayonnaise, lemon juice, lemon zest, and minced garlic in a bowl.
- Stir in the chopped tarragon, salt, and pepper, then mix until smooth. Adjust salt and lemon to taste if necessary.
- Once the artichokes are done, remove them from the pot and let them cool slightly.
- Serve the steamed artichokes with the lemon aioli on the side for dipping.
