Tender steamed artichokes pair beautifully with a tangy lemon aioli and aromatic fresh tarragon.

Ingredients

  • 4 artichokes
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 tablespoon fresh tarragon, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Trim the artichokes by snipping off the thorny leaf tips and cutting off the top inch of the artichokes.
  2. Fill a large pot with about 2 inches of water and place a steaming basket inside.
  3. Bring the water to a boil, then place the artichokes in the steaming basket.
  4. Cover the pot and steam the artichokes over medium heat for 25-30 minutes, or until the leaves easily pull away.
  5. While the artichokes are steaming, prepare the lemon aioli by combining mayonnaise, lemon juice, lemon zest, and minced garlic in a bowl.
  6. Stir in the chopped tarragon, salt, and pepper, then mix until smooth. Adjust salt and lemon to taste if necessary.
  7. Once the artichokes are done, remove them from the pot and let them cool slightly.
  8. Serve the steamed artichokes with the lemon aioli on the side for dipping.
