Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cups fresh or frozen peas
  • 2 cups vegetable broth
  • 1/4 cup fresh mint leaves
  • 1/2 cup crème fraîche
  • 1 teaspoon lemon juice

Instructions

  1. Heat the olive oil in a 6-quart saucepan over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the peas and vegetable broth, bring to a boil, then reduce to a simmer for 10 minutes.
  4. Stir in the fresh mint leaves and remove from heat.
  5. Using an immersion blender, puree the soup until smooth.
  6. Stir in the crème fraîche and lemon juice.
  7. Season with salt and pepper to taste.
