  4. Repeat the process with the remaining batter to make a total of 8 crepes, setting each aside as they are finished.
  5. In a small saucepan over low heat, melt the butter and then add the chopped dark chocolate, stirring until smooth to create the ganache.
  6. Fill each crepe with a spoonful of the chocolate ganache and a few fresh raspberries. Fold the crepes by first folding them in half and then into quarters.
  7. Serve the crepes warm.
