  • 1 1/2 pounds lamb shoulder, diced
  • 1 medium onion, chopped

  • 1 cup red wine
  • 28 ounces crushed tomatoes
  • 1/4 cup fresh mint, chopped
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Begin by heating a large pot over medium-high heat. Add the diced lamb and cook until evenly browned. Once done, remove the lamb from the pot and set aside.

  4. Add the lamb back into the pot along with the crushed tomatoes. Stir well to combine.
  5. Cover the pot and allow the mixture to simmer for approximately 1.5 hours, stirring occasionally to prevent sticking.
  6. After the initial cooking time, add the chopped fresh mint to the pot, stirring it through the ragu.
  7. Continue to simmer for an additional 30 minutes to allow the flavors to meld.
  8. To serve, ladle the lamb ragu over cooked pasta and sprinkle with grated Parmesan cheese.
