Ingredients

  • 4 medium chicken breasts, boneless and skinless
  • 1 cup feta cheese, crumbled
  • 2 cups fresh spinach, chopped

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the feta cheese, chopped spinach, minced garlic, oregano, salt, and black pepper.
  3. Cut a pocket into each medium chicken breast and stuff with the spinach and feta mixture.
  4. Secure the pockets with toothpicks to hold the filling in place.
  5. In a skillet, heat 1 Tbsp olive oil over medium-high heat. Brown the stuffed chicken breasts on all sides for a few minutes.
  6. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through to an internal temperature of 165°F (74°C).
  7. Remove the toothpicks before serving.
