  • 2 cups diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • salt and pepper
  • 1/4 cup chopped parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and scoop out the flesh, leaving a 1/2-inch border. Reserve the flesh for later use.
  3. In a large skillet, cook the ground meat over medium heat until browned. Add the onion, garlic, and reserved eggplant flesh, cooking until softened, about 5 minutes.
  4. Stir in the diced tomatoes, tomato paste, paprika, cumin, cayenne pepper, salt, and pepper. Cook for an additional 5 minutes until the mixture is well combined and heated through.
  5. Fill the eggplant halves with the meat mixture and place them in a baking dish. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 10 minutes, until the eggplant is tender and the tops are slightly browned.
  7. Garnish with chopped parsley before serving.
