  • 2 cups spinach, chopped
  • 1 cup onion, finely chopped

  • 2 tsp sumac
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 1 lb pizza dough

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat and sauté the onions until they become translucent, about 3-4 minutes.
  3. Add the chopped spinach to the pan and cook for about 2 minutes, or until wilted.
  4. Stir in the pine nuts, sumac, salt, and pepper. Mix well and remove from heat.
  5. Divide the pizza dough into 12 equal portions and roll each one into a circle about 4 inches in diameter.
  6. Place a spoonful of the spinach mixture in the center of each dough circle.
  7. Fold the edges of the dough over the filling to form a triangle, pinching to seal the edges tightly.
  8. Arrange the fatayer on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes, or until the pastries are golden brown.
  10. Allow to cool slightly before serving.
