Ingredients
- 1 pound prawns, peeled and deveined
- 1/4 cup soy sauce
- 2 Tbsp sesame oil
- 1 Tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1/4 cup water chestnuts, sliced
- 1/4 cup hoisin sauce
- 1 Tbsp cornstarch
- 2 Tbsp green onions, chopped
- 1 Tbsp sesame seeds, for garnish
Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, ginger, and garlic. Set aside.
- In a large skillet or wok, heat 1 Tbsp of sesame oil over high heat. Add prawns and stir-fry until they turn pink, about 2-3 minutes. Remove prawns from the skillet and set aside.
- In the same skillet, add mixed vegetables and water chestnuts. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
- Return prawns to the skillet. Pour in the prepared sauce mixture and hoisin sauce. Stir well to coat all ingredients evenly.
- In a small bowl, mix cornstarch with 1 tablespoon of water to create a slurry. Pour into the skillet and stir continuously until the sauce thickens, about 1-2 minutes.
- Transfer the stir-fry to a serving dish. Garnish with chopped green onions and sesame seeds before serving.
