Ingredients

  • 1 pound prawns, peeled and deveined
  • 1/4 cup soy sauce
  • 2 Tbsp sesame oil
  • 1 Tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup water chestnuts, sliced
  • 1/4 cup hoisin sauce
  • 1 Tbsp cornstarch
  • 2 Tbsp green onions, chopped
  • 1 Tbsp sesame seeds, for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, ginger, and garlic. Set aside.
  2. In a large skillet or wok, heat 1 Tbsp of sesame oil over high heat. Add prawns and stir-fry until they turn pink, about 2-3 minutes. Remove prawns from the skillet and set aside.
  3. In the same skillet, add mixed vegetables and water chestnuts. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
  4. Return prawns to the skillet. Pour in the prepared sauce mixture and hoisin sauce. Stir well to coat all ingredients evenly.
  5. In a small bowl, mix cornstarch with 1 tablespoon of water to create a slurry. Pour into the skillet and stir continuously until the sauce thickens, about 1-2 minutes.
  6. Transfer the stir-fry to a serving dish. Garnish with chopped green onions and sesame seeds before serving.
