Ingredients

  • 1 lb chicken breasts, thinly sliced

  • black pepper, to taste
  • 4 whole pita bread, whole wheat
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup tzatziki sauce

Instructions

  1. Combine olive oil, Dried Oregano, Garlic Powder, a pinch of salt, and a dash of black pepper in a bowl. Add chicken slices and ensure they are well coated with the marinade. Let marinate for 30 minutes.
  2. Preheat a grill pan over medium-high heat. Place the marinated chicken in the pan and cook for 5-6 minutes on each side, or until the chicken is fully cooked.
  3. In the same pan, briefly warm each pita bread for about a minute on each side until slightly toasted.
  4. Lay out the warmed pita bread and on each, arrange the cooked chicken, halved cherry tomatoes, thinly sliced red onion, diced cucumber, crumbled feta cheese, and sliced kalamata olives. Drizzle tzatziki sauce over the fillings.
  5. Fold the pita bread over the fillings to form the gyros.
