These skewers feature a delightful blend of sweet pineapple and crisp bell peppers, enhanced by a zesty chili lime glaze.

Ingredients

  • 1 pineapple, peeled and cut into chunks
  • 2 red bell peppers, seeded and cut into square pieces
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, salt, and black pepper to make the glaze.
  3. Thread pineapple chunks and bell pepper pieces alternately onto the soaked skewers.
  4. Brush the skewers generously with the chili lime glaze, coating all sides.
  5. Place skewers on the grill and cook for about 5 minutes on each side, or until the pineapple and peppers begin to char slightly.
  6. Remove the skewers from the grill and brush with additional glaze before serving.
