- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 1 tsp ground cinnamon

- 4 cups chicken broth
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1/2 cup pine nuts
- 1/2 cup parsley, chopped
- 1/4 cup olive oil
Instructions
- Season the chicken pieces with salt, pepper, cinnamon, allspice, and nutmeg. Let it marinate for at least 30 minutes.
- In a large pot, heat olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until softened, for about 3 minutes.
- Add the marinated chicken pieces to the pot and brown on all sides, about 5-7 minutes.
- Stir in the basmati rice, chicken broth, and half of the pine nuts. Bring the mixture to a boil, then reduce to a simmer, cover the pot, and cook for 20 minutes until the rice is cooked and chicken is tender.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Sprinkle with the remaining pine nuts and chopped parsley before serving.
