Instructions

  1. Prepare the pig by cleaning it thoroughly and removing any internal organs. Make deep cuts into the skin without puncturing the meat.
  2. Rub the salt, pepper, and garlic powder all over the pig, including inside the cuts in the skin.
  3. Let the pig marinate in the refrigerator for at least 12 hours or overnight.
  4. Preheat the oven to 350°F (175°C). Place the pig in the oven and roast for 6 hours, turning occasionally for even cooking.
  5. Increase the heat to 450°F (230°C) for the last 30 minutes to crisp up the skin.
  6. Remove the pig from the oven and let it rest for 30 minutes before carving and serving.
