  • 1/4 cup vegetable oil
  • 1 Tbsp lemon zest
  • whole eggs, lightly beaten
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Combine the all-purpose flour, sugar, poppyseeds, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk together the buttermilk, vegetable oil, lemon zest, eggs, and fresh lemon juice.
  4. Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan on a wire rack for 10 minutes, then carefully remove from the pan and allow it to cool completely on the wire rack before slicing.
