Ingredients

  • 2 cans chickpeas, drained and rinsed

  • 2 Tbsp garam masala
  • 1 Tbsp ground cumin
  • 1 Tbsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1/4 cup fresh cilantro, chopped
  • 2 Tbsp olive oil

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Saute for 2-3 minutes until the onion is soft and translucent.
  3. Mix in the garam masala, ground cumin, ground coriander, cayenne pepper, turmeric, and salt. Cook for 1-2 minutes until the spices are fragrant.
  4. Pour in the tomato sauce and coconut milk, and add the chickpeas. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  5. Just before serving, stir in the chopped cilantro.
  6. Serve the chickpea tikka masala hot alongside rice or naan bread.
