Grilled Portobello Mushroom and Cheese Sandwich

Ingredients

  • 2 large portobello mushrooms, stems removed
  • 4 slices bread of choice

  • pepper

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Brush the portobello mushrooms with olive oil. Season lightly with salt and pepper.
  3. Place the mushrooms on the grill. Cook for 4-5 minutes on each side or until they are tender and have grill marks.
  4. During the last few minutes of grilling the mushrooms, place the bread slices on the outer edges of the grill to lightly toast them.
  5. Remove the mushrooms and bread from the grill. On one slice of bread, place a grilled mushroom and a generous amount of shredded cheese.
  6. Top with another slice of bread. Press lightly to adhere.
  7. Return the sandwiches to the grill. Cook for about 2-3 minutes on each side, or until the bread is crispy and the cheese has melted thoroughly.
  8. Cut each sandwich in half diagonally and serve immediately.
